Springtime Ramp Pesto

Ingredients
  • 2 Ramps (Bunches)
  • 1/4 cup Dried Basil
  • 5 Basil (Leaves)
  • 1/2 cup Olive Oil
  • 4 tbsp Parmesan Cheese
  • 4 tbsp Nutritional Yease
  • 1/2 Lemon
  • Salt & Pepper (To taste)
  • 1/2 cup Pine Nuts (Toasted)
Instructions
  1. Add all ingredients to a blender or food processor.
  2. Blend until it reaches your desired texture.
  3. Enjoy!
Note
  • We prefer our pesto a bit chunkier, if you like it smoother add a tablespoon of water and blend longer. 
  • For a richer flavor feel free to add more olive oil.
  • We used mainly dry basil because we were out of fresh but you can use either.
  • This pesto is great on bread or mixed into pasta but who are we to tell you how to enjoy your pesto.
