Easy Black Eyed Pea Salad for the Summer

Ingredients
    Salad
  • 1 can black eyed peas (drained)
  • 1/2 can corn (drained)
  • 1/2 cup cherry tomatoes (quartered)
  • 1/4 cup onions (diced)
  • 2 tbsp cilantro (chopped)
  • Hot Sauce Vinaigrette
  • 2 clove garlic (minced)
  • 9 tbsp neutral oil (we used vegetable oil)
  • 4 tbsp apple cider vinegar
  • 1.5 tbsp dijon mustard
  • 1.5 tbsp hot sauce
  • 3 tsp honey
  • 2 tsp thyme
  • salt and pepper ((to taste))
Instructions
  1. Add all of the vinaigrette ingredients in to a jar or bowl. Then shake or whisk to incorporate all of the ingredients.
  2. Pour your canned ingredients (black eyed peas and corn), onions, tomatoes, and cilantro into a medium bowl.
  3. Mix well and then pour over half of the vinaigrette.
  4. Stir together and serve immediately or place in fridge if serving later.
