- 2 can black beans (drained)
- 1 can corn (drained)
- 1/2 tomato (finely diced)
- 1/2 red onion (finely diced)
- 2 tbsp cilantro (chopped)
- 1 tbsp olive oil
- 1/4 tbsp lime juice
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp cayenne powder
- 1/2 tsp paprika
- 1/2 tsp cumin powder
- 1/2 tsp chili powder
- 1 tsp trader joe's citrus garlic seasoning
- salt and pepper (to taste)
- First mix all of your seasonings together in a small bowl and then set them aside to add later.
- Pour your canned ingredients (black beans and corn) into a medium bowl.
- Then add the chopped ingredients to the bowl.
- Next, add the lime juice and olive oil.
- Then add the previously prepared seasoning mix to the bowl along with salt and pepper to taste.
- Mix ingredients and allow them to sit for at least 10 minutes. This will allow all of the flavors to meld.
- Serve up and enjoy!
Note
- The longer you let this sit the better it will be! We tend to make it the night before and refrigerate it for lunch the next day.
- If you do not have the Trader Joes seasoning, the recipe will be just as good without it, just add extra citrus.
- Feel free to add a jalapeño for some added spice.
