Black Bean and Corn Salad

Ingredients
  • 2 can black beans (drained)
  • 1 can corn (drained)
  • 1/2 tomato (finely diced)
  • 1/2 red onion (finely diced)
  • 2 tbsp cilantro (chopped)
  • 1 tbsp olive oil
  • 1/4 tbsp lime juice
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp cayenne powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin powder
  • 1/2 tsp chili powder
  • 1 tsp trader joe's citrus garlic seasoning
  • salt and pepper (to taste)
Instructions
  1. First mix all of your seasonings together in a small bowl and then set them aside to add later.
  2. Pour your canned ingredients (black beans and corn) into a medium bowl.
  3. Then add the chopped ingredients to the bowl.
  4. Next, add the lime juice and olive oil.
  5. Then add the previously prepared seasoning mix to the bowl along with salt and pepper to taste.
  6. Mix ingredients and allow them to sit for at least 10 minutes. This will allow all of the flavors to meld.
  7. Serve up and enjoy!
Note
  • The longer you let this sit the better it will be! We tend to make it the night before and refrigerate it for lunch the next day.
  • If you do not have the Trader Joes seasoning, the recipe will be just as good without it, just add extra citrus. 
  • Feel free to add a jalapeño for some added spice.
