This refreshing and protein heavy salad will be your go to recipe for an easy lunch or a picnic with friends! We first made this last summer in the middle of a heat wave when even thinking of turning on an oven made you sweat. This saved us on many a day and left us full without us overheating. This recipe will last a few days in the fridge so it works great for a meal prepped lunch but also tastes great after just a few minutes for a quick dinner. We do recommend letting the salad sit for at least 10 minutes or as long as you can for the most flavorful outcome.

Black Bean and Corn Salad

First mix all of your seasonings together in a small bowl and then set them aside to add later.

Pour your canned ingredients (black beans and corn) into a medium bowl.

Then add the chopped ingredients to the bowl.

Next, add the lime juice and olive oil.

Then add the previously prepared seasoning mix to the bowl along with salt and pepper to taste.

Mix ingredients and allow them to sit for at least 10 minutes. This will allow all of the flavors to meld.

Note
- The longer you let this sit the better it will be! We tend to make it the night before and refrigerate it for lunch the next day.
- If you do not have the Trader Joes seasoning, the recipe will be just as good without it, just add extra citrus.
- Feel free to add a jalapeño for some added spice.
